Happy pancake day!

Today is pancake day! As such, nothing better than sharing a recipe that I love to do. Perfect for breakfast and snack. 



(Unfortunately) I have not yet "invented" a recipe for pancakes. I've tried, but meh! So what I bring to you is not a recipe of mine, but it is delicious in it.

This recipe is gluten-free and vegan, and it's d e l i c i o u s.

For pancakes:

x 1 cup (100 g) rice flour / 1 cup (110g) de farinha de arroz)

x ¾ Cup (200ml) gluten free non-dairy milk / 200 ml de bebida vegetal sem gluten
x 1 tbsp* cacao poder / 1 colher de sopa de cacau em pó
x 1 tbsp chia seeds / 1 c sopa de sementes de chia
x syrup dates (optional) / geleia de tâmaras natural
x 1 tsp** baking soda / 1 c chá de bicarbonato de sódio
x coconut oil (for grease) / óleo de coco para untar a frigideira
Notes:
- Any other gluten-free flour like buckwheat flour, cornmeal, coconut flour, almonds or simply make a mixture of two flours.
- Dates can be replaced with fruit, such as bananas or apples.
- Chia seeds function like an egg and can be replaced with crushed linseed.
- Cocoa can be omitted or substituted with carob meal
* tbsp - tablespoon (colher de sopa)
** tsp - teaspoon (colher de chá)


Instructions
1. Combine all ingredients on a food processor, and blend until smooth. / Colocar todos os ingredientes na liquidificadora e bater até estar cremoso e homogéneo.
2. Heat a non-stick frying pan (slightly greased with coconut oil) / untar a frigideira com o óleo de coco, e aquece-la um pouco.
3. Pour 3 tablespoon of the batter and flatten to make the pancake shape (use less or more quantity, depending on the size you want) / colocar a massa que quiseres para obter o tamanho necessário que queres.
4. Cook the pancake for 2 to 3 minutes / cozinha entre 2 ou 3 minutos (ela começa a borbulhar)
5. Flip the pancake and cook for another 2 minutes / virar e colocar mais 2 minutos.
6. Serve

Topping:
- 1 cup of blueberries
- 1 cup of raspberries
- maple syrup (or other)

Put the berries in a food processor and blend until smooth. Strain the liquid and put on a fry. When starts to boil, add the maple syrup (or other). / Colocar as bagas num processador até estar cremoso. Coem o liquido e coloquem numa panela no fogão. Quando estiver a começar a ferver, desliguem o fogão e coloquem o adoçante à escolha (opcional)
You can use fruit, yogurt or any other thing as topping (or nothing). / Podem usar o topping que desejarem e mais gostarem.
